Stir Fried Cabbage Bowl

This stir fried cabbage recipe made with ground beef, and affectionately referred to as Crack Slaw by low carbers, was a favorite back when I was low carbing. Equally good with ground pork, turkey and even breakfast sausage, it's kind of like an inside out egg roll, without the high carb wrapper. Some folks refer to this dish as an egg roll stir fry or egg roll in a bowl.

Low carb. Yeah, in my dozens of diets over the years, I did it, the whole low carb thing, and frankly, it is a great way to lose weight pretty quick, say, for instance, to help shed those holidays pounds. Or for a special occasion coming up. For me, however, it was not good for the long term.

I have seen folks who have done low carb as an alternative lifestyle by choice, not necessity, and very often, well... they don't look well or healthy to me. I'm not talking about folks who have to do reduced carbs for serious health issues folks. I'm not talking about folks who reduce their "bad" mostly white carbs for more healthy carbs either. I'm talking about folks who consume massive amounts of meats, bacon and heavy fats to avoid any carbohydrates at all - both the good ones and the bad ones.

Anyway, after losing nicely for awhile, my weight loss stalled pretty quick - apparently my body likes a bit more balance. I mean, it started getting to the point that I had to limit SALAD for pete's sake because things like lettuce and tomatoes have carbs and so long as I had any carbs whatsoever, my weight loss stalled!

Whatever. It really wasn't a lifestyle I could live with forever.

But, if you want to knock off a few pounds fast, cutting back on carbs for a little while can certainly help with that. Just be mindful that it can come back with a vengeance when you decide it's not really for you either. Ask me how I know.

Anyway... when I was low carbing, this dish, referred to as "Crack Slaw," minus the rice of course, was a popular low carber dish that earned that name because it was supposedly addicting to many low carbers. While it's a delicious dish whether you are low carbing or going low fat, I never quite got that connection personally.

This is a variation of the original recipe, which to the best of my memory started as a Body for Life recipe that used rice. Many low carbers often use the packaged slaw mix and some substitute broccoli slaw, and of course, eliminated the rice. You can add in some shredded carrots, but if you're low carbing, keep in mind that carrots are a starchy vegetable.

Depending on the type of ground beef you use, or if you sub in ground turkey, this is a fairly low calorie and low fat dish that is pretty darned tasty dish if you happen to love cabbage and it's a dish that I still love, even when I'm not low-carbing.

The Cajun is not much of a veggie eater and not big on cabbage at all, so I usually make this up just for myself on those nights when he's not that hungry ... like, for instance, yesterday, when he filled up on junk all day watching sports at his bud's house and had no room for a real meal.

I prefer to use a fresh head of cabbage because I like it sliced thicker than the prepackaged coleslaw cabbage blend, which, as you can see by the picture below, tends to melt in the skillet, as opposed to the picture at the top where the cabbage is more substantial. You can certainly substitute the packaged cole slaw mix, but a head of cabbage is more economical and will provide you with more cabbage to use for something else. If you're a cabbage lover like me, that's the biggest bonus!
