Steak Parmesan

Steak Parmesan

Steak Parmesan is a real family-pleaser that comes together pretty easy. I usually do 3 or 4 cube steaks, leaving leftovers for the two of us. For a family you may want to do at least 6 to 8 cube steaks and increase some of the ingredients just slightly, though one steak is enough even for The Cajun.

I used to prepare this in the oven, uncovered for about 20 minutes and it was tender, but I'm finding that today's cube steaks aren't as tender as they once were, so I've started baking it covered for a longer period of time. I'm pretty happy with that method and The Cajun likes it too, so that's all that matters to me!

Here's how to make my Steak Parmesan.

Preheat the oven to 350 degrees F. Heat the bacon fat or oil in a heavy bottomed skillet over a heat that is just over medium to medium high. Meanwhile, prepare three shallow dishes. In the first, combine the flour, salt and pepper. In the second, beat together the milk and egg. In the third, combine the bread crumbs with the Parmesan cheese, Cajun seasoning, parsley and pepper flakes.
 

Dip the cube steaks into the flour mixture, then the milk and egg mixture and finally dredge in the bread crumbs.


Brown in the hot oil over medium heat for about 3 minutes per side. Remove to a baking dish.



Pour sauce evenly over the tops of the cube steaks and cover pan tightly. Bake for 55 minutes, remove, uncover, add mozzarella to each patty, and sprinkle with Italian seasoning. Return to oven, uncovered, just long enough to melt cheese.


I often serve these with Instant Pot mashed potatoes, one of my favorite things to make in the Instant Pot and a side of Quick Fix Green Beans, made from "kitchen cut" canned green beans. A side of parslied potatoes is also good - just simply peeled and chopped potatoes, that have been boiled, then drained and tossed with melted butter, salt and pepper and parsley - Mama used to make those all the time. Add a simple mixed garden salad. Pan roasted potatoes would also be nice. Easy, simple, and quick. Dig in and enjoy.

Ingredients

  • 4 to 6 cube steaks
  • 2 tablespoons bacon fat or cooking oil
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/3 cup milk
  • 1 large egg
  • 3/4 cup Italian-style bread crumbs
  • 1/4 cup shredded Parmesan cheese, divided
  • 1/4 teaspoon Cajun seasoning (like Slap Ya Mama), to taste, optional
  • 1-1/2 cups marinara or pizza sauce
  • 4 to 6 thin slices mozzarella or equivalent shredded
  • 1 teaspoon dried Italian seasoning

Notes:

For Chicken Parmesan, substitute boneless, skinless chicken breasts, placing between layers of plastic wrap and using the flat side of a mallet, pound to an even thickness. Dredge as above and brown for about 3 minutes per side, transfer to the baking dish, top with marinara sauce and bake uncovered at 350 for about 20 minutes, or until chicken is cooked through. Top with mozzarella and return to oven just long enough to melt cheese.
