Mama's Pineapple Filling

A delicious filling that is perfect in cakes.

Mama's Pineapple Filling


Recipe: Mama's Pineapple Filling

©From the Kitchen of Deep South Dish

Ingredients
  • 1/2 cup granulated sugar
  • 4 egg yolks
  • 10 ounces (1/2 of a large can) crushed pineapple (Dole recommended)
  • Juice of 1 medium lemon
  • 1-1/2 tablespoons butter (Land O' Lakes recommended)
  • 1 tablespoon all-purpose flour
Instructions

Combine all ingredients and cook over medium heat until well thickened. Cool. This will thicken some when cool. Makes about 1 cup of filling; use approximately ½ cup per layer.
