Hard to say really. Couple things come to mind - fresher eggs for sure, and let the eggs come to room temperature so they aren&#39;t too cold. Beat the eggs first before they are added into the other ingredients - it should be very smooth when it goes into the pie shell, and don&#39;t overcook - that can cause some separation to occur.
