Sweet and Spicy Rotel SauceThis is a wonderful, all purpose tomato sauce, perfect for spooning over meatloaf, or just about any meat, poultry, pork or fish. Made with brown sugar, chunky RO*TEL tomatoes, spicy horseradish mustard and my favorite Cajun seasoning, it's a great balance between spicy and sweet and a perfect accent. We love it, and I think it will become a favorite sauce for you too.
Here's how to make it.
Recipe: Sweet and Spicy Rotel Sauce©From the Kitchen of Deep South Dish
Prep time: 5 min |Cook time: 10 min | Yield: About 1 cup
- 1 can of Rotel chunky style diced tomatoes
- 1/2 cup of ketchup
- 1 teaspoon spicy mustard (like Emeril's)
- 2 tablespoons of light brown sugar, packed
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama) optional
In a small saucepan, combine the tomatoes, ketchup, mustard, brown sugar, and Cajun seasoning. Bring to a boil, reduce heat and let simmer until heated through and thickened. Spoon hot sauce over slices of meatloaf or other meat, poultry, pork or fish.
*Emeril's Spicy Mustard contains: Vinegar, Water, Mustard Seed, Salt, Horseradish Powder and Red Pepper
