Easy Pork Chop and Onion Bake
This recipe is so easy, yet so tasty and full of flavor, nobody but you will know how easy it was. It's one of my favorite way to do pork chops because it produces a wonderfully tender and delicious chop. I like to do this low and slow in the oven, but you can also finish it on the stovetop on a low simmer if you prefer. Recipe: Easy Pork Chop and Onion Bake

Prep time: 15 min |Cook time: 40 min | Yield: About 4 to 6 servings
Ingredients
Instructions
- 6 bone-in pork chops
- 1-1/2 tablespoons canola oil
- Kosher salt, fresh cracked black pepper and Cajun seasoning (like Slap Ya Mama), to taste
- 1 Vidalia or yellow onion, sliced into rings
- 1-1/2 cups of beef stock or broth
- 1 teaspoon of dried thyme, crushed
Preheat oven to 325 degrees. Heat canola oil in a large stainless skillet. Dry the chops well and add to skillet, sprinkling the top side with salt, pepper and Cajun seasoning; brown. Turn, sprinkle the other side with seasonings, brown; remove to a baking dish.
In the same skillet, break the onion into rings and saute in the pan drippings until lightly caramelized. Add the broth to the skillet and deglaze. Pour the entire contents of the skillet over the chops, spreading the onions evenly over the top of the chops; sprinkle with the thyme.
Cover and bake at 325 degrees for about 40 minutes or until tender and cooked through. Spoon pan sauce over individual servings.

ReplyDeleteMary, although my seasoning may be different from yours, the browning and putting in the oven to become fork tender and the seasoning to ooze down into the meat has been a favorite of mine for many years. Will be trying yours very soon.

ReplyDeleteI think it would work great for the CP! I'd still sear the chops and caramelize the onion myself, throw the chops in and top with the onion and I'd say take it about 4 to 5 hours on low for 1/2 inch chops. I'll have to give it a run myself to be sure, but that ought to do it!

DeleteExcellent dish. Made it for dinner tonight. Hubby and I enjoyed. I substituted garlic powder in the place of the salt. Only because Slap Ya Mama has various seasonings plus I am a garlic LOVER. This was so easy and doesnt require much time.

DeleteMade this tonight Mary. Served it with white rice and green beans. We had some thin, boneless chops that I used. Due to that, I cut down the bake time to 25 mins. Wish I would have cooked them a little longer so they would have gotten more tender.
ReplyDeleteWhen I pulled them out of the oven, I drain the beef broth into a pot, added a little corn starch and turned it into a gravy,
It was really good. Wife and I had it for dinner and I am thinking those two pieces left over are going to make a great sandwich (pork dip?) for lunch tomorrow...
