Stir Fried CabbageThis stir fried cabbage recipe made with ground beef, and affectionately referred to as Crack Slaw by low carbers, was a favorite back when I was low carbing. Yeah, I did it, the whole low carb thing, and frankly, it is a great way to lose a few pounds pretty quick, say, for instance, those holidays pounds. For me, however, it was not good for the long term. My weight loss stalled pretty quick - apparently my body likes a bit more balance. I mean, it started getting to the point that I had to limit SALAD for pete's sake because things like lettuce and tomatoes have carbs and so long as I had any carbs, my weight loss stalled! Whatever. But, if you want to knock off a few pounds fast, cutting back on carbs for a little while can help with that.
Anyway, when I was low carbing, this Crack Slaw, minus the rice of course, was a popular low carber dish that earned that name because it was supposedly addicting to many low carbers. While it's a delicious dish whether you are low carbing or going low fat, I never quite got that connection personally. It could be that if they were say consuming this entire dish, they were eating way more carbs than they realized. One small head of cabbage actually does have 23 net grams of carbs, so keep that in mind if you're low carbing and in induction. No wonder everybody loved it, huh? This is a variation of the original recipe, which to the best of my memory was actually a Body for Life recipe that used rice. Many low carbers often use the packaged slaw mix and some substituted broccoli slaw, and of course, eliminated the rice.
Depending on the type of ground beef you use, this is a fairly low calorie and low fat dish that is pretty darned tasty dish if you happen to love cabbage and it's a dish that I still love. You can also eliminate the ground beef all together and use ground turkey, or simply just stir fry the cabbage and rice with the seasonings. Any of those variations is delicious.
The Cajun is not much of a veggie eater and not big on cabbage, so I usually make this up just for myself on those nights when he's not that hungry ... like, for instance, yesterday, when he filled up on junk all day watching sports at his bud's house and had no room for a real meal. Recipe: Stir-Fried Cabbage with Ground Beef or Turkey©From the Kitchen of Deep South Dish
Prep time: 10 min |Cook time: 15 min | Yield: About 4 to 6 servings
- 1 pound of ground beef (can substitute turkey)
- 2 tablespoons of sesame oil, divided
- 3 green onions, sliced
- 3 cloves of garlic, minced
- 2 cups of cabbage, sliced thin
- 1 cup of cooked rice (brown or white), optional
- 2 tablespoons of low sodium soy sauce
- Pinch of kosher salt, or to taste
- 8 turns of the pepper grinder, or to taste
- Crushed red pepper flakes, to taste
Brown ground beef, remove and drain; set aside. To the same skillet, add 1 tablespoon of the sesame oil and heat over medium high. Add green onion and garlic and stir fry for 2 minutes. Add the cabbage and stir fry another 2 minutes. Add the rice, soy sauce and remaining sesame oil; stir fry for another 2 minutes. Add the cooked ground beef back to the skillet and sprinkle with the red pepper flakes; toss until heated through.
Variation: Substitute a package of cole slaw mix or broccoli slaw for the cabbage.
Low Carb Variation: Make it low carb by eliminating the rice.
Leftovers Utilized: Cooked Rice. Yes - you can freeze it, and I certainly do! Simply drizzle with water, cover and microwave to freshen.
