A simple, but tasty southern favorite, this cucumber salad is made of very thinly sliced fresh cucumbers and is dressed with a boiled sweet and sour vinegar dressing. |
Spicy, Sweet and Sour Cucumber Salad
Just as the name says, this is a spicy cucumber salad with a boiled sweet and sour dressing made with vinegar and sugar. If you prefer not to have the heat, just eliminate the red pepper flakes, and, if you like things more on the sweet side, just use equal parts vinegar and sugar, or adjust the sugar up according to your taste.Hungry for more? Check out the other two cucumber salad posts I just put up - Fire 'n Ice Summer Salad and Simple Summer Salad. With summer veggies at their peak I think you'll enjoy having a wide variety of salads!
Recipe: Spicy, Sweet & Sour Cucumber Salad
©From the Kitchen of Deep South Dish
Prep time: 40 min | Yield: About 4 to 6 servings
Ingredients
Instructions
- 3 medium sized cucumbers
- Couple pinches of kosher salt
- 1 small white onion
- 1/4 teaspoon of freshly cracked black pepper, or to taste
- 1 cup of apple cider vinegar
- 3/4 cup of granulated sugar
- Dash of crushed red pepper flakes
- Couple of dashes of dried basil
- Couple of dashes of dried parsley
Peel the cucumbers and slice into very thin rounds. Sprinkle with salt and let stand for at least 30 minutes. This will draw moisture out of the cucumbers. Drain the cucumbers, place into a clean kitchen towel and squeeze all of the excess liquid out. Place the cucumbers into a glass bowl.
Cut the onion in half and slice each half into very thin slices. Add to the cucumbers, add pepper and toss.
Bring the vinegar and sugar to a boil until sugar is dissolved. Whisk in the pepper flakes, basil and parsley and pour the hot sugar mixture directly over the cucumbers and onion; stir. Allow to marinate in the fridge or at room temperature for at least an hour before serving.

ReplyDelete:) You know... I find that food bloggers are often thinking about the same foods at the same time. Sometimes I will make something with the intent of posting it in a couple of days, and another blogger will post a very similar recipe that very day that I made it too!
ReplyDeleteI love cucumber salads. This one I will try!
ReplyDeleteThis one is more tart than the other Fire 'n Ice one, so if you want it sweeter increase the sugar a bit. Enjoy!!
ReplyDeleteHi Mary! I made this last night to serve to some guests we are having this afternoon..... I couldn't wait to try it out first thing this morning lol. DELISH!! ReplyDeleteDo you rinse off the cukes after salting them?
ReplyDeleteI do not, although it really is only a couple of pinches of salt. Drain then squeeze out excess water.
DeleteMother always made a cucumber and onion salad that I loved. This sounds a lot like hers. Pinning it!!
ReplyDeleteI love a good cucumber salad - especially when made with homegrown cukes!
