Fire and Ice Summer Salad

One of my favorite southern salads for the summer, this spicy, sweet and sour Fire and Ice salad, gets it's name from the contrast between the red onion, green bell pepper, horseradish and jalapenos, and the cool crunchy cucumber and sweet tomatoes.

Fire and Ice Summer Salad

A great use for that summer harvest of garden fresh tomatoes, peppers, cucumbers and jalapenos, this is another southern favorite and certainly a personal favorite of my own. I can make a meal out of this salad alone on a hot summer day.

Recipe: Fire 'n Ice Summer Salad

Prep time: 10 min |Inactive time: 2 hours | Yield: About 4 to 6 servings


Ingredients

For the Dressing:
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of red wine vinegar
  • 1/4 cup of sugar
  • 1 teaspoon salt
  • 1 teaspoon horseradish
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed
For the Salad:
  • 1 medium green bell pepper, cut into thin strips
  • 1 small red onion, cut in half and sliced thin
  • 1 jalapeno, chopped fine
  • 3 large tomatoes, cut into chunks
  • 2 medium cucumbers, peeled and sliced thin
Instructions

Combine both of the vinegars with the sugar, salt, horseradish, and celery and mustard seeds in a small saucepan. Stir and bring to a boil, boiling for 1 minute. Set aside.

In a large glass bowl, combine bell pepper, red onion, jalapeno and tomatoes. Pour the hot vinegar and sugar mixture over the vegetables and set aside to cool.

Add the cucumbers, stir, cover with plastic wrap. Refrigerate for several hours. Use a slotted spoon for serving to drain excess liquid off when serving.

  1. This is my husband's favorite summer salad (minus the jalepenos). This is a great recipe to take to parties, etc. during the summer months.

    Bev, me too - this is one of my favs also, but I like the jalapeno! The Hubs here doesn't like it though. But his idea of a salad is iceberg lettuce drenched in french dressing grrrr!

    Ronnica, you could eliminate the horseradish, but really it's not very prevalent. Course if you hate it, it might be to you!

  13. This is the best salad ever. We have had it several times now and love it more each time we fix it. The last time I made it, we added strawberries instead of tomatoes and yummers...that adds a differnt spin on things. Thanks so much, a very loyal follower, Linda

  14. This salad Rocks.. I used cherry tomatoes in half because I am too lazy to chop up 3 tomatoes.. IT was great. I am taking the recipe with me to the 4th of July party because I know that everyone will want the recipe after they see and taste this great salad.

  16. I made this for supper...I didn't have a jalapeno, but I did have some yellow cherry tomatoes, and colored peppers that I added in....its DE-LISH!!!! loved it...gonna keep the recipe handy, for garden season...yum!! THANK YOU for always sharing wonderful recipes!!!!

  17. Just made this over the weekend except I used a serrano, simply because I love the flavor. It is such a refreshing summer salad. Thanks so much for sharing! I wonder if you could use stevia instead of sugar.....I've been battling systemic yeast all spring.....of course yeast feeds on sugar. :(

    2. I'm thinking that the seeds may give an unwelcome bite. Would I miss a lot if I put them in cheese cloth to "steep" then removed it?

    I made the collard greens with the vinegar and cooked them for close to 2 hours and they were so good, I just about thought I died and gone to heaven!!!

    1. Nan,

      My husband has very sensitive teeth, and this salad poses no problems to him. I do not find that the seeds have any bite to them. They get rather soft (not mushy) after you boil the pickling mixture for a minute or 3. If you are worried, maybe you could boil/strain then make a small cheesecloth sachet with the seeds to make sure they keep infusing your dressing with their flavor? I have never made them without the seeds, but I imagine it would affect the flavor of the recipe since the spices wouldn't be there to enhance the flavor throughout the hours of refrigeration. I don't think it would be bad though, just maybe a little different from the recipe as written.

      My husband has very sensitive teeth/several root canals/fillings/etc., and this salad does not pose any problems for him. The seeds do not have any bite (not that either of us have noticed). They get very soft from boiling in the vinegar pickling mixture. I think the final flavor would be affected by removing the seeds, but not necessarily in a bad way, just different from the recipe as written. The seeds wouldn't be around to keep infusing their flavor in the refrigerator for several hours. Maybe when you strain the seeds in cheesecloth, you could cut a little square and make a sachet to throw in while it pickles in the refrigerator? Either way, it will still be delicious. You can't go wrong with a cucumber salad :)
