Deli Style Chicken Salad

Cooked chicken and boiled eggs, celery, mayonnaise and a little pickle relish, makes up a classic deli style chicken salad.

Deli Style Chicken Salad

Rotisserie chicken purchased from your local grocery store deli is a great quick meal for those rushed weekday dinners. Buy the larger one and you'll have some leftover chicken, perfect for this chicken salad. Otherwise, just boil up some chicken cuz this is one good sandwich! I prefer this chicken salad served on white wheat or just plain ole white bread.


For a touch of nostalgia, serve the sandwiches wrapped in butcher paper or waxed paper. Simply place the sandwich on the paper with the top edge folded under. Fold the bottom up, and tuck the sides around the back of the sandwich. Helps hold in the filling and so country chic!


Recipe: Deli Style Chicken Salad

Prep time: 10 min |Cook time: 15 min | Yield: About 4 to 6 servings


Ingredients
  • 1 cup of mayonnaise, or to taste
  • 1/4 cup of sweet pickle relish
  • 1/2 teaspoon of poultry seasoning
  • Kosher salt and freshly cracked black pepper, to taste
  • 3 cups of cooked and chopped or shredded mixed chicken, chopped
  • 3 boiled eggs, peeled and chopped
  • 1 cup of finely diced celery
Instructions

In a medium bowl, whisk together the mayonnaise, pickle relish, poultry seasoning, salt, and pepper. Add the chicken, eggs, and celery and toss, adding more mayonnaise for desired consistency. Chill for several hours so flavors can meld together.

  1. Delicious...I could go for a chicken salad sammie right about now! And YES, I laughed when I saw that we both made watermelon margaritas yesterday, too!! (it was one of those days when I couldn't get through to comment...)I bet it would be delicious to add some strawberries...which I just happen to have ;)

  8. I bought a rotisserie chicken this past week to make to make just that--chicken salad sandwiches. I ended up using it for something else so I am still hungry for chicken salad--I guess I'll just have to get another!! Thanks for the reminder. Sheila in NC

  12. I love those rotisserie chickens. I almost always end up making a chicken pasta salad with leftovers. I usually enjoy it as much (or more) than the original chicken dinner! The sandwich in your picture looks like it straight out of a Woolworth's menu!

    1. It's pretty common here - like tuna salad & shrimp salad - we kinda think of it more like putting chicken in our egg salad LOL!!

  16. That looks really good! I may have to try it that way. I love a basic chicken salad. The one I normally make is also really simple, boiled 3-4 boneless breasts chopped up in my food chopper with half an onion. Then I mix up some mayo & ranch dressing along with salt, pepper, and some Cajun seasoning. Very easy and good!
