Breakfast Quesadilla
I don't know why but I had a taste for a quesadilla this morning. If I would have had some bacon or even some sausage, I sure woulda tossed some of that in, but I settled for a slice of deli ham and that was mighty fine indeed! Serve with a side of fruit - I had a banana - and a bit of chunky salsa and a dab of sour cream or Greek yogurt on the side for dipping and this will feed two, or one very hungry adult. One half of it was plenty filling for me.Here's how to make one.
To start, soft scramble some eggs in butter in a non-stick skillet over medium heat. You want the eggs to be slightly wet because they'll continue to cook in the tortilla and you don't want them to be dried out and overcooked. Remove the eggs from the skillet and set them aside.
Wipe out the pan and melt the other half of the butter over medium heat.
Lay one tortilla in the skillet.
Tear one slice of the American cheese and scatter it about.
Top with a slice of deli ham or turkey, cooked sausage or cooked crumbled bacon. These are also really good with leftover cooked shrimp or crabmeat.
Scatter the scrambled eggs on top of the ham.
And tear the second slice of cheese and scatter that about on top of the eggs.
Top with the second tortilla and turn the heat up to medium high. Cook until the botttom is crispy and golden brown; turn and brown the other side.
Remove to a cutting board and let rest for a moment.
Slice in half and then in quarters and serve with a side of salsa for dipping.

- 3 eggs
- 1 to 2 tablespoon of butter
- Splash of half and half
- 2 flour tortillas
- 2 slices of cheese, or any kind of shredded cheese
- 1 slice of deli ham or turkey, or cooked sausage or crumbled bacon
Beat eggs with a splash of half and half. Scramble with a bit of butter in a skillet over medium heat to a soft, wet consistency. Remove, add a bit of additional butter on top of egg, and set aside; wipe out pan.
Add more butter to the skillet and melt over medium heat. Once melted, add the first flour tortilla. Tear one slice of the cheese or add shredded cheese and scatter on top of the tortilla. Add the slice of ham, turkey, cooked sausage or cooked, crumbled bacon and the scrambled eggs. Top with remaining cheese and the second tortilla.
Turn the heat up to medium high and cook until the bottom tortilla is golden brown and crisp. Using a wide spatula or egg turner, carefully turn the tortilla over and cook on the other side until golden brown.
Remove to a cutting board and let rest for just a minute. Slice in half and then in quarters. Serve with a side of chunky salsa and unsweetened Greek yogurt and some fruit.
Cook's Notes: Add sauteed onions and peppers, either sweet or hot for a little extra kick.

ReplyDeleteI love, love, love a good breakfast burrito too! The main difference here is that with a quesadilla you are browning the tortilla which adds that delicious crunch & a nice textural contrast!
