|Dry onion soup mixed with ketchup, mustard and sweet pickles, combined with cooked ground beef, makes this loose meat sandwich sort of like a deconstructed hamburger.|
Hamburger SandwichI just love this Hamburger Sandwich! I don't call this a po'boy because the sandwich isn't dressed and pressed like our po'boys are in Mississippi - for this sandwich I like the French bread buttered and then just lightly toasted so that you have just a bit of a crunch to it.
The beauty of this recipe is that it's a quick and easy meal to throw together too - all done on the stovetop in the skillet. You can also make it as pictured, using one large loaf of French bread and sliced into servings, or serve it up sloppy joe style on individual rolls or buns. I hope that you give this sandwich a try because it really is absolutely yummy - enjoy!
First, stick some butter in the microwave to melt and then, let's brown up a pound of ground beef.
And don't forget that little tip of mine about using a potato masher to break the meat up into small, fine crumbles. It really does a fantastic job!
While that's going, grab the loaf of French bread.
Cut the bread in half lengthwise.(I'm just making up 1/2 of the loaf for now for the two of us and saving the other half plus half of the meat mixture for later.)
And brush on the melted butter. You can either do this in a skillet, on a grill, or in the oven. Just toast until bread is slightly crunchy and cut side is just getting golden.
Now, in a separate small bowl, combine the ketchup, mustard and sweet pickles.
To that add a package of dry onion soup mix. I like the golden onion variety but the regular works fine too.
Mix that all together.
To the browned ground beef, add the 1/2 cup of beef stock. Since we're using a packaged mix, try to use low sodium broth if possible.
And the ketchup mixture.
Stir that together well...
...bring to a boil and then reduce to a simmer, just to heat though.
Grab your toasted bread. This could have probably gone for just a tad bit longer if you want, but I was gettin' hungry!
Pile the meat mixture on the bottom part of the French bread loaf.
Top with some chopped onion.
And chopped tomato.
And some shredded lettuce. You can also add shredded or sliced cheese, more pickles, jalapenos, bacon, or whatever your favorite burger toppings are. I like it just like this.
Top with the other half of the French bread and cut into serving sizes. A full loaf of French bread will serve 4, or 2 very hungry adults. My husband will eat a whole half sandwich, and so will I if I am really hungry! Serve with a side of chips, some pickle spears, raw carrot sticks, or even a small side salad if you like. Fast, easy, delicious. What more could you ask for on a busy night?

Prep/Cook time: 20 min | Yield: 2 to 4 servings
- 1 pound of ground beef
- 1 loaf of French bread
- 2 tablespoons of butter, melted
- 1/4 cup of ketchup
- 2 heaping tablespoons of sweet pickle relish
- 2 teaspoons of Dijon mustard
- 10 turns of the pepper grinder
- 1 envelope of dry onion soup mix
- 1/2 cup of beef stock (try lower sodium here)
- Chopped onion, chopped tomato and shredded lettuce, or optional toppings for garnish
Cook ground beef in a medium size skillet over medium heat. Split the French bread in half lengthwise and brush cut side of bread with the melted butter; grill or toast in a skillet. Brown the ground beef until cooked through, breaking up to a fine crumble. While meat is browning, in a separate small bowl, combine the ketchup, sweet pickle, mustard and pepper. Add the onion soup mix to the ketchup mixture and stir together well.
To the browned ground beef, stir in the beef stock and the ketchup mixture; bring to a boil. Reduce heat and simmer until heated through well. Spread the meat mixture over the bottom half of the toasted French bread. Top with chopped onion, tomato and shredded lettuce, or other toppings as desired. Top with other half of the toasted French bread and cut into serving slices. Serves 4, or 2 really hungry adults.
Note: I used Lipton Recipe Secrets Golden Onion soup mix. Some brands of beef broths and stocks can be pretty high in sodium, and in combination with the packaged onion soup mix, might be more salt than you like. A lower sodium broth would help to decrease that. To toast bread in the oven, preheat oven to 400 degrees F. Place the bread into the preheated oven for about 5 minutes per side, cut side up first then down, until lightly toasted and crunchy.
