Crockpot Barbecue Beef for Sandwiches

Beef for sandwiches with a delicious homemade barbecue sauce made so easy with a slow cooker. Pop it all in before you leave and come home to an easy supper.

Barbecue Beef

This is an absolutely delicious barbecue beef that is perfect for sandwiches, and so simple. Toss it all into the crockpot in the morning and it's ready for you when you get home. Fresh and homemade from ingredients you control and the flavor shows it. Stick with the fattier cuts of meat, or if you use leaner cuts, use them in combination with a mixture of the fattier cuts for the best flavor.

Here's how to make it.

Recipe: Crockpot Barbecue Beef for Sandwiches

Prep time: 10 min |Cook time: 7 hours | Yield: About 6 to 8 servings

  • 3 pounds of braising beef (stew meat, bottom round, chuck)*
  • 1 green bell pepper, chopped
  • 1 small yellow onion, chopped
  • 1 (6-ounce) can of tomato paste
  • 1/2 cup of packed light brown sugar
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon chili powder
  • 2 teaspoons of kosher salt
  • 1 teaspoon of dry mustard
  • 2 teaspoons of Worcestershire
  • Couple dashes of hot sauce, optional

Whisk together all of ingredients except for the meat in a slow cooker. Add the meat, cover and cook on high for about 7 hours. Shred meat and pile on toasted buns.

Cook's Notes: Best with the fattier cuts of meat like chuck, or use a mixture of fattier cuts with lean cuts. Can also use 1/2 beef with 1/2 pork if desired.

I don't really do my recipes by servings but unless otherwise specified for only 2, most of my recipes are designed for a family - say 4 to 6 servings, so I'd say with 3 pounds of meat, this would probably be about 6 servings once it has cooked down. Depends on the people, adults or kids, and the appetites really. Sorry I can't be more help.

  6. Mary is right on with a estimated 4-6 servings if the consumers are a parent/children family mix. If you are self serve piling on kaiser rolls for a bunch of guys at a tailgate party, figure three (3). Always make extra, you'll have potato salad and cole slaw left, but not the BBQ.

    1. That is absolutely true!! I find it kind of difficult to even estimate servings to be honest. It's really all dependent on appetites, what else is being served and as you point out, WHO is being served LOL!! For tailgating I'd absolutely increase this recipe by at least double, probably even more and cook it in my biggest crockpot!!

  7. I made this today and my whole family loved it! That's really saying something, because no matter what I cook, it seems that at least one of my kids doesn't like it. I did have to leave out the green peppers to keep them happy, but it's a definite make-again! Thanks for a new great recipe! :)

  8. Can I use ground beef with this recipe instead of braising beef?

    1. I have not, but I don't see why you couldn't. Two problems you might run into is if you use a fattier ground beef, which would give the most flavor, you'll probably have a pool of fat floating on top. You can skim that off before stirring. You could use a more lean ground beef, but then you take the risk of losing the flavor you would have had from the fat. I'm also not sure it would need the full time so that might need to be shortened a bit. All that to say, if you do try it, please report back to us and let us know how it was!
