Recipe: Apple and Spice Oatmeal Muffins

Prep time: 10 min |Cook time: 25 min | Yield: About 12 muffins

Ingredients
  • 1-1/2 cups of all purpose flour
  • 3/4 cup of quick cooking oatmeal
  • 1 teaspoon of baking powder
  • 2 teaspoons of baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup of unsalted butter, softened at room temperature
  • 1/2 cup of light brown sugar, packed
  • 1 large egg
  • 3/4 cup milk
  • 2 cups of peeled, cored and chopped apple
  • 1/2 cup raisins, optional
Instructions

Preheat oven to 375 degrees F. Butter a 12-cup muffin pan or spray with non-stick cooking spray; set aside. In a large bowl, whisk together the flour, oatmeal, baking soda and baking powder, salt, and spices until well mixed. Set aside.

In a separate bowl, cream the butter, add the brown sugar and blend together. Beat in the egg first and then the milk. Add the apples and raisins, if using, to the dry mix and mix in. Add the wet ingredients to the dry and stir gently to combine. Spoon batter evenly between the muffin cups and bake at 375 degrees F for 20 to 25 minutes or until lightly browned and a toothpick inserted into the center of comes out clean.

Cool in pan for 5 minutes and transfer to a wire rack to finish cooling.

Optional Streusel Topping: Combine 1/2 cup of light brown sugar, packed with 1/3 cup of flour and 1/2 teaspoon of ground cinnamon. Stir in 2 tablespoons of melted unsalted butter and sprinkle on top of the muffins just before baking.
