Mama's Pineapple Filling
Recipe: Mama's Pineapple Filling©From the Kitchen of Deep South Dish
- 1/2 cup granulated sugar
- 4 egg yolks
- 10 ounces (1/2 of a large can) crushed pineapple (Dole recommended)
- Juice of 1 medium lemon
- 1-1/2 tablespoons butter (Land O' Lakes recommended)
- 1 tablespoon all-purpose flour
Combine all ingredients and cook over medium heat until well thickened. Cool. This will thicken some when cool. Makes about 1 cup of filling; use approximately ½ cup per layer.
