Low Carb Wilted Hamburger Chopped Salad

I got this recipe from a gal named Renee on one of our boards back when I was low carbing. Yes, every once in awhile us southern gals cut back on our carbs too, but it's a good salad for anytime really - kinda like a taco salad but with a burger flavor and no shell.

Hamburger Chopped Salad (Low Carb)
From the Kitchen of Deep South Dish
  • 1 pound of ground beef
  • 1/4 cup of chopped onion
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • Garlic powder, to taste
  • 4 cups of chopped lettuce
  • 1 medium tomato, chopped
  • 1/2 cup of dill pickle slices, chopped coarsely
  • 1/2 cup mayonnaise
  • 2 teaspoons yellow mustard
  • 1 tablespoon heavy cream (more or less)

Brown ground beef, add the onions, salt, pepper, and garlic powder and cook until onions are softened.  While beef is browning, chop the lettuce and combine with the chopped tomato and pickles.  Add the beef mixture to the lettuce mixture and stir until lettuce is wilted.

In a separate small bowl, stir together the mayonnaise and mustard until well blended.  Thin with the cream until mixture is thin enough to pour.

Add the dressing into the salad and gently fold in until everything is mixed together well. Serve while warm.

Serves 4

Low Fat Variation: Substitute turkey or very lean ground beef, low fat mayonnaise, and milk for the cream.
